Russian Coulibiac is a savory pie or also called pirog (baked case of dough with filling inside), stuffed with various savory fillings and baked into a beautiful, decorative piece of pastry. Coulibiac can be made either with a puff or brioche dough, with the puff being one we'll be preparing in the class from scratch. We'll be making a traditional version of Coulibiac stuffed with:
Salmon (or mushrooms for vegetarian version)
Buckwheat or rice filling
Seasoned mushroom stuffing
Egg
Delicious white wine and dill sauce - that will be served as a side of the Coulibiac
