SALMON COULIBIAC WITH WHITE WINE DILL SAUCE

Russian Coulibiac is a savory pie or also called pirog (baked case of dough with filling inside), stuffed with various savory fillings and baked into a beautiful, decorative piece of pastry. Coulibiac can be made either with a puff or brioche dough, with the puff being one we'll be preparing in the class from scratch. We'll be making a traditional version of Coulibiac stuffed with:

  • Salmon (or mushrooms for vegetarian version)

  • Buckwheat or rice filling

  • Seasoned mushroom stuffing

  • Egg

  • Delicious white wine and dill sauce - that will be served as a side of the Coulibiac
